    Trehalose is a kind of safe, reliable natural carbohydrate which widely exists in many edible plants and animals and microorganisms of the nature , there are usually too much content trehalose in many plants and aminals body , such as mushrooms, seaweed, beans , shrimp, bread, beer and yeast food.

    The sweetness of trehalose is just 45% of sucrose, so it performs well in keeping the original flavor of food.

    Trehalose is non-reductive sugar and will not take part in Maillard reaction with amino acids or proteins during the manufacturing process and storage even at elevated temperatures.Thus, trehalose can be favorably used in food and beverage where heat treatment is required or storage at high temperature.

    Due to the above features, trehalose can be widely used in beverage to adjust the PH balance,cover or reduce the bitterness,reduce the sweetness,prevent browning,cover astringency ,adjust the flavor and so on.
